I always found much more satisfaction creating banana bread from scratch than from a mix. Here is a recipe passed along through my family that has always gotten rave reviews. Enjoy!
| 2 lg eggs |
| 1/2 tsp salt |
| 1 tsp vanilla extract |
| 1/4 cup butter (softened) |
| 1/3 cup plain or vanilla yogurt |
| 1 cup sugar (or less if desired) |
| 2 cups all purpose flour |
| 3/4 tsp baking soda |
| 1 1/2 cups ripe bananas (about three) |
| 1/2 cup chopped walnuts |
| Cooking spray |
