LEMON TOFU STIR FRY

CHEF'S NOTES AND COMMENTS:

A tasty vegetarian dish!

INGREDIENTS:

1/2 block of firm tofu
Chinese boc choy vegetable, cabbage or snow peas
Chinese mushrooms
1/2 onion
red capsicum
1 lemon
fresh garlic
fresh vegan oyster sauce, soya sauce, vege salt
steamed rice

INSTRUCTIONS:

Preparation time: 30 minutes

1. Cut tofu into 2cm x .5cm blocks and marinate the following:

Mix:
1/3 cup oyster sauce
.5 teaspoon soya sauce
1/3 lemon juice
freshly minced garlic

2.Prepare 1/2 cup of soya,oyster sauce, lemon juice & garlic

3. Saute, garlic, ginger, diced onion, capcicum in a little olive oil

4.Add a little sauce

5. Add tofu and stirfry a little until just turning brown

6. Add remaining vegies and sauce

7. Shredded boc choy is to be added just before serving (it shrinks)

8. Serve on a bed of cooked rice
