ARMENIAN RICE PILAF

Note: Although not part of Sandy’s recipe, often Armenian Pilaf includes artichokes, asparagus, or mandarin oranges as displayed in the photo.

INGREDIENTS:

3/4 stick - real butter 1-1/2 c - rice
1/4 cup (or less) vermicelli or angle hair pasta
2 - 24 oz. cans chicken broth or 3 cups broth made with water & chicken bouillon

INSTRUCTIONS:

Prep Time: approximately 30 minutes.

1. Break up angel hair pasta

2. Lightly brown angel hair & rice in butter

3. Add broth - bring to a boil - cover & simmer for 20 minutes or until rice is done & liquid is absorbed.

Serves 8
