BANANA BREAD (FROM SCRATCH)

CHEF'S NOTES AND COMMENTS:

I always found much more satisfaction creating banana bread from scratch than from a mix. Here is a recipe passed along through my family that has always gotten rave reviews. Enjoy!

INGREDIENTS:

2 large eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 cup butter (softened)
1/3 cup plain or vanilla yogurt
1 cup sugar (or less if desired)
2 cups all purpose flour
3/4 teaspoon baking soda
1 1/2 cups ripe bananas (about three)
1/2 cup chopped walnuts
Cooking spray

INSTRUCTIONS:

Prep Time: approximately 2 hours.

1. Preheat oven to 375
2. Add first six ingredients to mixing bowl and mix until well blended
3. Add flour and baking soda to bowl and mix until well blended
4. Add bananas and walnuts to the dough and mix until bananas are nearly mashed
5. Spoon into a 9' x 5' loaf pan coated with cooking spray
6. Cook for one hour or until wooden toothpick comes out clean
7. Cool for 10 minutes and eat
