CHINESE CHICKEN SALAD

A quick and easy family favorite

INGREDIENTS:

3 lbs. cooked (preferably grilled) chicken, cut into chunks or shredded
1 lg bag salad mix
1 sm bag blanched slivered almonds, toasted
¼ cup toasted sesame seeds
2 packages of Chicken Ramen noodles – crunch up noodles
1/3 cup slivered almonds

MARINADE:

1/2 cup oil (I use Canola)
3/4 cup Red Wine Vinegar
1/4 cup sugar
1/4 cup chopped green onion
1 tsp. salt
Dash of grated ginger root
Dash of soy sauce

INSTRUCTIONS:

Prep Time: approximately 4 hours.

1. Marinate chicken for several hours in large bowl.

2. Combine and toss all ingredients together and chill at least 3 hours before serving.
