"CHRISTMAS WISH STAR" CHOCOLATE COOKIES

CHEF'S NOTES AND COMMENTS:

This is one of the most sought after holiday cookies and is our family's favorite.

INGREDIENTS:

SHORTBREAD:

2 cups flour
1 cup (2 sticks) unsalted butter, room temperature
½ cup sugar
1 bar (4oz.) Ghiradelli 60% Cacao Bittersweet Chocolate baking bar, chopped
1 teaspoon vanilla
¼ teaspoon salt
DIPPING:
1 bag (11.5 oz.) Ghiradelli 60% Cacao Bittersweet Chocolate Chips
1 Tablespoon butter

INSTRUCTIONS:

Prep Time: approximately 2 hours.

1. Melt baking bar on a double boiler and set aside.

2. Mix flour and salt together and set aside.

3. In large bowl, beat butter and sugar until smooth.

4. Add melted chocolate and vanilla.

5. Add flour mixture to chocolate mixture and mix just until blended.

6. Wrap dough in plastic wrap and chill at least for 1 hour.

7. Heat oven to 350 degrees.

8. Line baking sheet with parchment paper.

9. On a lightly floured board, roll dough 3/8 inch thick and cut with star cookie cutters. If dough is too soft, chill another 30 min.

10. Bake 7 – 9 minutes.

11. Cool completely in pan.

12. Melt chocolate chips with 1 Tablespoon butter in double boiler.

13. Dip cooled cookie in melted chocolate mixture and let chocolate set.

Serves 2 dozen
