LAYERED VEGETABLE CASSEROLE

CHEF'S NOTES AND COMMENTS:

This was adapted from my a friend's mother's recipe, very yummy, filling and can be varied with whatever veggies you like.

INGREDIENTS:

Use as many vegetables as you need to fit the chosen casserole dish:

White or Red Potatoes, peeled and cut into quarters
Carrots
Green Peppers
Mushrooms
Celery
Onions
Spices (basil, parsley, oregano, garlic whatever you prefer)
1 can tomato soup
Optional: Crushed tomatoes

INSTRUCTIONS:

Prep Time: approximately 1 hour.

1. After you wash, peel and slice veggies, layer in a casserole.

2. Between each layer, pour some soup and sprinkle with spices.

3. Repeat until you fill dish, leaving a little room at the top.

4. Cover and cook in the oven at 350F for 40-50 minutes or until heated through.
