MICROWAVE 2-EGG OMELET

CHEF'S NOTES AND COMMENTS:

Great for breakfast if you are in a hurry.

INGREDIENTS:

1 large coffee cup (microwave safe)
1 tsp. cooking oil
2 large raw eggs (do not use extra-large!)
¼ cup Grated cheese, onion, chopped ham, etc, according to what you want.

INSTRUCTIONS:

Total Prep Time: approximately 3 minutes.

1. Coat the inside of the coffee cup with the cooking oil.

2. Crack the eggs and place inside coffee cup. Mix well.

3. Microwave for one minute on 90%, uncovered.

4. Remove cup and notice it has cooked into a donut shape with a hole in the middle. Add remainder of ingredients into the center of the egg. Do not overfill! Keep contents at least an inch below cup rim.

5. Put cup and everything back into the microwave for one minute on HIGH. Do not cover. Contents will swell up and bulge above cup rim like a souffle, but wont spill over unless you have overfilled, (This may take some practice.)

6. Contents should plop out of the cup. If stuck, remove from cup by cutting along inside perimeter of cup with knife or fork.

You now have a cylinder-shaped omelet – perfectly cooked! (Hint: slice it for a sandwich.)

Serves 1.
