BBQ FISH: ORANGE ROUGHY

INGREDIENTS:

1 lb. Orange Roughy (fish fillet)
1 small white onion, sliced
1 cup sliced red bell pepper, chopped
1 cup sliced green bell pepper, chopped
2 stalks of sliced celery, chopped
1 cup zucchini, sliced
1 tablespoon of butter
Foil

INSTRUCTIONS:

Prep Time: approximately 45 minutes.

1. Heat barbeque or oven to 400
2. Place mixture of the vegetables onto a piece of foil both below and above the orange roughy.
3. Add a tablespoon of butter on top of the fish.
4. Wrap the foil around everything. Seal it with a little air space inside.
5. Place entire concoction onto the BBQ for about twenty minutes, turning it once at the halfway point.
6. Remove from BBQ, open foil, add a little Lawry’s Season Salt to taste and enjoy!
