SPINACH PASTA SALAD

INGREDIENTS:

1 cup cauliflower flowerets, steamed
1 cup mushrooms, sliced
1/2 cup purple onions, finely chopped
1 cup Roma tomatoes
1/2 cup Italian dressing
8 oz. spinach noodles, cooked & drained
1/2 cup grated Parmesan cheese

INSTRUCTIONS:

Prep Time: approximately 45 minutes.

1. In a large bowl, combine cauliflower, mushrooms, onion, tomatoes, & dressing.

2. Add noodles & toss lightly.

3. Spoon into bowls, sprinkle with cheese & serve.

Serves 6 to 8
