INGREDIENTS:
1 yellow onion, sliced
1/4 cup butter
2 lbs. zucchini, sliced
1/2 cup butter, melted and divided
2 cups shredded mozzarella cheese
1/2 cups bread crumbs
1/4 cup grated Parmesan cheese
INSTRUCTIONS:
Prep Time: approximately 1 hour.
1. In a lightly greased 2-quart baking dish, layer onion & zucchini.
2. Drizzle with butter; sprinkle with mozzarella cheese.
3. In a separate bowl, combine remaining butter, bread crumbs & Parmesan cheese.
4. Sprinkle crumb mixture evenly over the top.
5. Bake, uncovered at 350 degrees for 35 to 40 minutes or until zucchini is tender.
